Elroy's picture is pretty much what happens. The sun orbits around a fixed point in the "True Center" of the solar system because of the gravitational pull from the Earth and the other 7 planets.

When it comes to the Earth's orbit, all orbiting really is is falling towards something. When you simultaneously drop a pencil and a hammer and a baby off the Empire State Building on a day where there is magically no air around to cause air resistance, the baby would suffocate and die first but they would all hit the ground at the same time. You can demonstrate this at home by dropping any two of those 3 objects off your roof at the same time.

Increasing the mass of the Earth would change the orbit of the sun (but not to a noticeable degree unless we like quadruple our size, and even then it wouldn't be a dangerous degree) but we wouldn't "Fall any faster" because how fast we fall is already independent of how much we weigh.

I am even humble enough to admit my goofy shortcomings as to which concepts my mind wants to hold onto

when first asking the question, I didn't know all the parameters of whether it was impractical or not, as I did not know how many asteroids, or their size or if all were mined (with obviously a shit-ton of financial resources) what effect it would have if any
