This has been asked a hundred times already I'm sure.. sorry. I haven't looked at the XIV section much and I don't want to search the threads.
How does the PS3 version compare to PC? I would choose the PC version but right now I'm stuck with a old one that can't play it. I know that the console won't have AA or certain graphical tweeks but how noticeable is it? I have a 32" 1080p tv so I would think it would still look decent.
On a 32" TV it will still look decent, but make no mistake PC and PS3 are night and day. Most notable being the Frame rate/overall graphic quality/load times. One of my kids play on a 32" tv and it wasn't bad visually, when I let her use the PS3 on my 60" tv it looked pretty bad.
The PS3 version has a resolution of 544p, upscaled to 720p, though it is not as bad as it sounds. Looks similar to a PC running it at about average to above-average settings, so no real worries there as far as I'm concerned. Where it is a bit lacking is in the processing/load times, these can be a bit on the long side (at least in Phase 3, they may have optimized further since then). Occasionally you will have issues with certain mobs/NPCs not loading in very highly properly areas, but very rare. Overall, it runs pretty well on PS3, and judging from the boost in scores from the new benchmark lots of people have been experiencing, maybe there's room to make it run even better.
My brother-in-law's been running the Ps3 version and yea, it looks/runs quite well, with the load times being the exception. It's pretty noticeable on npc's if you've been chuggin along on a chocobo or sprinting.
If planning on playing seriously on a Ps3, one suggestion I've seen is to swap the HDD for a SSD to alleviate the processing/load time issue.

Is it possible to play against type/role in the given jobs using the system?
i.e. play Paladin as a damage dealer or healer if no tanking is required (yes yes, I can just switch to another job but ...)
Not to FFXI this up of course but I always found it interesting (ok, your performance would be sub-par but it's something at least!) to be able to play SAM as a DD or tank, for example, of a WHM as a healer or DD (if you got all the gear for it) etc
I think that's generally going to be the purpose of the 2-jobs-per-class system. You pick a class based on what you want to do (swing a sword, shoot arrows, heal fuckers, punch fools, be a dark angsty mage), and you switch to a job that focuses on what you want to do for any specific event (summon primal egis to fuck shit up or summon a little fairy to frolic and be gay).
Other than that, it's unlikely that you can realistically compete with a properly geared DD class on a tank or healing class despite how much you might push its envelope. However, you will have some options if you're not currently taking hits. Sword Oath, any cross-class skills, gear meant more for MRD than GLA, etc.
