What is unavailable to players from here on out is:
-Mounts-
Goobbue: Mount that was discontinued August 13th 2012.
Legacy Chocobo: Unique chocobo mount to be rewarded only to Legacy members.
-Items-
Seasonal Event items: Reindeer suits, Dragon Kabutos, etc. Always missable.
Dalamud Horn: Headpiece rewarded for completing the 7th Umbral Era storyline.
White Ravens: Earrings rewarded for defeating Nael van Darnus - Hard.
Imperial Operative Hat/Tricorne: Hats rewarded for defeating Garleans during 7th Umbral Era events (Not 100% confirmed gone, but it was implied).
-Achievements-
Spearfishing achievements: Spearfishing is being removed.
Exploration achievements: Becoming obsolete due to heavily altered geography.
Behest achievements: Becoming obsolete due to Behest mechanics being overhauled and camps changing.
Dungeon challenge achievements: Dungeons in question probably being changed or removed.
Garuda & Beastmen leader achievements: Unknown why they have been removed.
Notorious Monster achievements: Were based on regions, which are changing.
Guildleve achievements: Were based on now outdated Aetheryte camps.
Seasonal Event achievements: Always missable.
Then there's bonus items for preorders and collector's editions and whatnot that can still be obtained if you manage to somehow find a legitimate code, but for all intents and purposes, they are probably considered unobtainable by new players:
Asuran Armguards: Code included in first run of Final Fantasy XIII.
Onion Helm: XIV Collector's Edition bonus.
Garlond Goggles: XIV Standard Edition preorder bonus.
Hermes Sandals: Bonus for having both XI and XIV accounts live.

Legacy chocobo and any items obtained through promotional codes are account bound (preorder bonuses, etc. -- every character on the account can obtain one). Everything else is character bound, this includes the Goobue.
Yeah, the only things currently tied to entire accounts are the Legacy Chocobo, Asuran Armguards, Onion Helm, Garlond Goggles, and Hermes Sandals.
I'm not sure how they are going about giving Legacy members the special Chocobo (most likely in-game), but for everything else, once a code is registered with a Square-Enix account, any new characters created afterwards will be created with the item already in their inventory. So, with some digging around and possibly trusting eBay shitbags, you could probably buy said codes for your items and register them with any account that doesn't already have them and then create your character. However, I don't think you could dig up a separate code for Hermes Sandals since I think that promotion has expired which was triggered by having XI and XIV services both active on a single account.
Thus, if you could find an account that already has Legacy membership status and Hermes Sandals, you might be able to hunt down codes for Asuran Armguards/Onion Helm/Garlond Goggles and have all account-bound bonuses (including the superior $10/mo subscription).
So my 11 and 14 accounts are on the same SE ID. I was wanting to know if it was anyway possible to have 14 account removed from the SE ID and put it on a new one?

It was possible, for a time, to remove a ff11 account from a SE ID if you could fully authenticate it. However, I believe it was a 1-time thing, I think SE was trying to clean up all the transferred/bought/given accounts, and it might have been discontinued. I know this because I had created a 2nd SE account for my mule, not realizing I could have two POL ID on one SE ID, I was confused on the process. I don't know if it is possible to unlink a FFXIV account.
This legacy chocobo, did you have to do anything before the servers went down (other than subscribe for 3 months)? I subscribed for 3 months, have the little banner thing on my character select screen, but other than do a few leves and get the goobbue mount, I didn't do shit.

Hermes Sandals are not account-wide. You get the Hermes Sandals when you create your character AND when you have an active subscription to XI and XIV. Discontinue the XI subscription and you lose the ability to create the sandals on new characters. Case in point, as soon as I got the sandals I canceled my XI subscription because it wasn't needed any longer.
That... is an account-wide bonus (as long as your XI service is active). It behaves just like any other bonus item code, except for the fact that you can essentially chose to turn it off.
Regardless of the semantics, is it even still possible to get Hermes Sandals on a freshly created character?
Unless it was a limited time thing (or unless XI was cancelled while I wasn't looking) I don't see why not.
I had assumed (based on I-don't-know-what) that it may have been a limited-time thing.
I'm not going to reactivate my XI just to find out though.
Meh, for my completionist-self, the discontinued stuff is actually proving to be a bit of a downer, not sure if I'll get around to play the game. Especially mounts has always been a huge deal (had 120ish when I quit very early Cataclysm in WoW), so missing out on the Goobbue might just turn me away from the game, as sad as it sounds.It's a bit of a shame, SE could probably make a ton of money selling the mount for 10€/15$ like so many other games does. Ah well..

So, there will be locked (if FFXIV has transfers at all unless the server is dead population wise) "fresh" servers? That actually sounds interesting. Haven't seen any info about it from the posts from the devs I've been reading, does anyone have any info they wouldn't mind sharing?
It's just as it sounds. They are going to have a server(s) that only fresh characters can join, where no 1.0 players can transfer to.
All we know is that they are setting up fresh servers that will only allow newly-created characters (aka: existing characters can't transfer to them). They are not locking these servers to specific platforms (PC vs PS3), they are just for new players or old ones who want to start over.
Chances are, they'll allow transfer to these servers a year or two down the line.
(edit: Just to clarify, I'm pretty certain old players will be able to start new characters on these servers, they are just trying to create economy-less worlds for people if they want them. So, there could be Legacy members in such places with Garlond Goggles, Onion Helms, Legacy Chocobos, etc. Just no Goobbues because those were based on a key item only given to Lv.30+ characters.)
