Happy Birthday/Feliz Cumpleaños is a comic phrase that's shouted or sung as an opponent gets one or two assist (characters) caught in the attacker's attack.
Some other slang terms you would like to know:
"It's Mahvel Baybee": Denotes Marvel vs Capcom 1, 2, & 3 (Ultimate) being played. The accompanying hype that the Marvel vs Capcom series brings.
Godlike/GDLK: Something amazing that pops off in game. EX: "OMG, did you see that combo? That shit was godlike!"
Salty: A mad or pissed off player. "Haha, ChrisG lost! That nigga is crying. Man, he's so salty."
Free/Fray: Someone who is too easy to defeat.
Fraud: A player that is not very skilled and has had some success in a past tournament either because they got an easy pool or got very lucky.
Randomed Out: A player that loses to a player who is less skilled, but wins with cheap tactics in a tournament.
Pot Monster: Players low and mid tier players who don't don't intend to win. Coined by Arturo Sanchez.
Pringles: Magneto's Crouching strong that leads into an infinite in Marvel 2. "Once you pop (Cr.Sr), the fun don't stop (Mag Infinite)." Pringles now means someone with a weak defense. Coined by Yipes. EX: "OH HE SO PRINGLES, WHERE YOUR CURLEH MUSTACHE AT?"
American Reset(s): A dropped combo that is converted back into another combo because the opponent was too slow to react.
Up-back/Chicken Block: Jumping while blocking. Used to help block against certain mixups.
Kubota/Kubo/Chou Escape (Glitch): Glitch involving a tag with a dead member on your team, then canceling the tag just as your opponent uses a hyper. Grants 2-3 seconds of invincibility and sometimes swaps position on character re-entry. Used at odd times to throw people off.
Download(ed): To figure out an opponents mannerisms and/or gameplan. EX: "Tokido downloading fools again in AE. JP is too stronk."
Stronk: Misspelled version of "Strong." Used to classify a group of players/character(s) or specific movesets.
OP/OD: "Overpowered." Something in game that's clearly broken or overpowered. EX: "Yo fuck Marvel! Morridoom is too OP."
P'd On: Getting Perfected on. Double entendre joke that also states that you got disrespected and usually styled on. Also known as R. Kelly.
Get(ting) Bopped/(Get) Blown Up: Not getting P'd On, but getting beat down bad in a match. Also verbal threatening statement popularized by Fanatiq.
UOP: Unorganized Player. Usually uses the most random of tactics to win. Usually used by NYC/NJ players. "What the fuck? This nigga is just doing random shit. What a UOP."
Clutch: A close match and any last minute tactics that goes down to the wire.
On Blast: Talking mad shit about players while speaking the truth about a situation. "Oh snap, EVO getting put on blast by Triforce again."
Beasting/Beastmode/Getting Beasted On: See: "Getting Bopped."
Lame Game/Playing Lame/Zoning: Keep away gameplay in a match.
Rushdown Game: Opposite of Zoning and turtling. Overly offensive gameplay in a match, with or without mixups.
Mexican Uppercut: Crouching uppercut. Used to make fun of Spanish players who can't do Shoryukens correctly.
Footsies: Neutral game in a match. The spacing and movement between two characters before attacking.
Handsies: Footsies, but with Balrog.
BnB/Bread n Butter: Basic combos that are usually mastered and often used during clutch moments, so that combo's aren't dropped.
Swag Combo/Swag/Swerve/(Getting) Styled On: Opposite of BnB. Combos used to show off and/or hype up the crowd when it's not needed. Prone to being dropped.
"Ey! Ey! Ey! Ey! Ey! Ey! Ey!...": Shouted with each attack after Genei Jin is activated by Yun or Yang.
"HAI HAI HAI HAI!": Shouted by MOV loudly and obnoxiusly after a Poongko juggled people in the corner during Shadowloo Showdown. Is now at used at EVO when Yun or Yang juggles people in the corner.
Poverty (Games): Old and forgotten fighting games no one plays but are played by "poor" people since they can't afford good games. Also used to refer to the general FGC.
STSFN: "Save that Shit for Nationals," the act of holding your newly learned tech(s) until big events, usually EVO, CEO or Final Round.
Bait(ed): Act of being tricked into using or spamming a specific attack, usually one that's predictable and punishable.
50/50: Mixup that gives the opponent only a 50% chance of blocking one or the other incoming attack.
Oki(zeme)/Wake-up: Pressuring a felled opponent as they rise up from the ground, forcing them to immediately block or react.
Vortex: Situation in a fighting game where one character is continuously knocked to the ground on wake-up, repeating the situation.
YOLO Footdive: Randomized Doom Footdives that catches opponents off-guard. Usually used by UOP Doom players who are losing and/or Marlinpie.
Scoops (Haagen Daas): A well timed grab in a match. Usually used at a clutch moment in Marvel 2 or 3.
Sword(s) of Revealing Light: Vergil's Sword Storm.
Searchlight: Ryu's Jumping Shinku Hadoken
Dat Pipe/Pipeu: Haggar's Jumping Down H or Forward H. Popular attack that catches people into a swag Haggar combos.
Boots, Splash, Ass: She-Hulk's Emerald Cannon (Boots), Emerald Impulse (Splash), Emerald Disaster (Ass). Shouted as each hit of the hyper connects. Coined by Yipes & Keth Sillian.
3... 2... 1... Blast Off!: Zero's Lightning Loops. "3... 2... 1..." countdown is used with each loop repetition, while "Blast Off!" is used with each Hyper Charged Buster shot after loop completion (The shot looks like he's "blasting off"). Coined by KillerKai.
Watching a Movie/Zero Lightning Loops (Cereal): Also Zero Lightning Loops.
M&Ms: Doom's Basic BnB combo. Makes large use of M button, hence the term.

Juice Kick/Rainbow Tatsu: Aerial Tatsu that's perform just as Ryu rises from the ground in SF2. Travels in a rainbow arc and is motion inputted just before leaving the ground. Creates it's own cross up.
Fuzzy Guard/FuzzyWuzzies: Act of getting hit by an Instant Overhead as you try to block low. Called Fuzzy because the hurtbox is still regarded as "standing" even if you're crouching. Used after forcing a standing animation or getting high by a jumping attack right after blocking. Also can be used to explain for any situation where your character is forced to block in a crouching or standing animation, then getting hit by the opposite of however you are blocking because the game won't register a changed blocking input.
Maximum Wesker/Maximum Vergil: Wesker's Phantom Dance and Vergil's Dimension Slash. Rip offs of Spiderman's original Maximum Spider animation from older Marvel VS games.
"Bitch is Blue Like Cotton Candy": Getting hit by Captain Commando's Captain Corridor.
"Squeeze Dis Nigga"/Gravity Cheese/Swaggity Squeeze: Getting hit by Gravity Squeeze. "...you are delicious" & "you are deleted" sometimes said by stream monsters after the last hit in Gravity Squeeze.
