[edit] to go with that, since we're talking about it, anyone have any recommendations on pizza stones? I see them ranging from like $20-$50 bucks. Not sure if there really is an actually difference or are you just "paying for the name brand" kind of thing.

I've gotten 2 from the Christmas Tree Store super cheap that are perfect. One thing to remember is they are porous so you aren't supposed to wash them with soap -- that's why we had to get a second one. No idea if there is a difference getting a fancier one, would think not considering they are just chunks of ceramic.

The knob shaft is probably a d-shaft (pretty standard). Measure the shaft diameter (calipers will be helpful if you have some sitting around). Google d-shaft knobs and you should find a plethora of results. You should be able to figure out which one is best for you based on how your oven is laid out. You can use the oven thermometer to calibrate your scale (this is going to yield much better results than using sugar, and is far simpler anyways.)

For some reason I have a vague memory of using ceramic floor tiles in my oven before we got a pizza stone. They were sort of the ghetto way to serve the same purpose, but looking back on it they might have been even better because they covered the whole floor of the oven.

Just a side note. I went all OCD on my bathroom and kitchen. Took apart the oven and cleaned it. (I dont do the cooking around the house, but I was sick of looking at it)
