If anything, I'll say Star Wars has been lacking more duels
admittedly bloated but every big fight in The Raid + Raid 2 is better than any duel in any Star Wars, what's the worry

The fast paced prequel trilogy style? I like the ROTJ fight between Luke and Vader the most, especially when Luke loses his shit
I think the samurai style is more intense/suspenseful. Where as the faster paced has more overall potential.
I think both have their merits so I'd like to see both, based on which characters are fighting. Luke is old, so I would imagine his style will be the slower samurai style like in the OT (plus he learned fighting Vader and Vader was limited by his suit), but that sith guy seems pretty energetic so he'd be fast.
I think Vader would have been a ninja if the 4-6 had come out when 1-3 did.

I never read the books, but in the movie at least Obi says to Anakin that "if you practiced your light saber training as much, you'd be as good as master Yoda." So it's implied he's the master at light saber battles.
Also, from what I've been told from the books, the light saber battles are just as much of a force battle as physical battle (fighting in the person's mind and throwing force behind your swings), so it would follow that the best Force user (Yoda) would be the best saber user.
