I think about every dog has separation anxiety. Tearing up the house is a little extreme though!

I know it all depends on the dog and the training but I have a mini aussie who fucking loves cats and is the most intelligent dog I've ever seen. They do well in a town house/apartment with moderate walking. They're not short coated like you mentioned, but I myself live in FL and he doesnt seem to mind it too bad.
Puppy... always start with a puppy when getting them adjusted to cats. Brought my wifes corgi over to my parents house and he tried to eat the damn cats I thought and no amount of restriction would get him to stop hating them, but my aussie was introduced to them as a puppy and loves them now.
Didn't read all the posts, so sorry if I parrot what others might have said. I know bg is all PitBull humpers but they aren't the only good breed out there. Every shelter dog needs a home, don't be closed boxed into a certain breed. I do actually think any kind of lab is a really good breed to have with cats. And I actually suggest if you're will to, don't get a puppy as long as you find an older dog without too many issues. Cats hate dogs because the dog is often all up in their face. An older dog will be much calmer around cats, and in my experience labs are really calm with cats. The also tend to not be biters (this is not just an issue with pits). you said you wanted a smaller dog, but believe it or not the bigger the dog is often the better. A lot of little dogs were breed for herding, so tend to be rather nippy. Bigger dogs also tend to have less health issues, too.

Great advice. I foster dogs with an organization here that adopts them out, and the number of dogs that need a home is insane (it's a little heart breaking, and I don't even really like dogs that much, heh). Also, if you want a pit, if your area is anything like mine the shelter will be FULL of them. Between backyard breeders and people who just abandon their dog, every time we go to pick out a new foster there are two or three pits for every other single dog.
I'd look for an organization that fosters dogs and has events to adopt them out. They will usually have a ton of information about each dog because the foster parents will write a bio about it.
You could avoid losing your belongings while you at work by just kenneling your dog. It's not like they see it as punishment as long as you don't treat it that way; my dogs actually like their kennels.

I have a lab mix that is 2 years old. The worst she ever did was chew up a wooden derby car because it was left on the floor. She got into the garbage a few times until she learned it wasn't ok. We can now leave all day with her in the house and food sitting within her reach and she won't touch it. Persistent and consistent training.
I also grew up having labs and never once had a problem with them tearing stuff up.
