Gathering stat seems to affect Speed of gathering a fish, i tryed catching a lvl 10 fish using lvl 1 gear, it took forever, but with lvl 20 gear, HQ, it took me about 1-2 seconds for a fish.

This is correct. When I was sandfishing in the 30s I would stay out there as long as possible, breaking all my gear multiple times. Each time it broke my catches would take 5x longer as I lost ALL my gathering stats at once.

That's what I've been doing, but so many are really freaking vague or incorrect. A lot of them told me to use bait I wasn't high enough for, to catch fish my level or lower. Most of the time I'd do what they said and RARELY get the fish. Maybe bad catch rate, maybe bad bait/location. Location not as bad after I've caught it once.

as far as which bait to use, that will take a bit more time. some fish *require* specific baits, like mahi-mahi needs yumizuno. most fish you can figure out quickly.
freshwater baits and lures, ocean baits and lures, skyfishing and dune fishing. if you are targeting a lvl 5 fish, use a bait/lure close to its level. many times if you use a higher level bait, you'll catch an assortment of fish that like that bait, etc.
most fish have a "preferred" bait so you'll get more of that fish, but that takes figuring out.

This will help. Bait definitely seems to be important. Doing leves in Quarrymill I had a tough time figuring out what to use to catch Copperfish/Dark Sleepers. While the bait I used CAUGHT them, I would catch other fish 90% of the time.

So apparently by utilizing a controller with rumble you can fish with the game minimized while you do other shit on your computer. One of my FC members fished all the way to 50 while playing LoL.

Also, I had this weird situation where I was at Cape Westwind trying to catch some bullshit to mooch with and when I was using (I think) Pillbugs, EVERY. SINGLE. CATCH. was a NQ (Lv.3) Merlthor Goby. I'm talking like 40 catches in a row, all of them too small to mooch with. My Gathering/Perception is something like 265/250 so... I don't get it. Could bait impact the size of fish that can be caught as well as type? Or was this just some really fucked up RNG fit...

Best utilized in cooking, yes. However, ALCs also rely on Sharks for Shark Oil (they use various fish for a few other things, but it's all lowbie crap). It's probably less profitable than the other DoLs since you can't target what you want. In an ideal world, certain fish would be more expensive to make up for it, but I often hear fishers complaining about some dick dropping the price.

Minions, Red Coral (Red Coral Earrings), Blacklip Oysters (Black Pearls), Silver Sharks & Hammerhead Sharks (Shark Oil), and maybe a few others for cooking like Mahi-Mahi (Pan-fried Mahi-Mahi), Navigator's Daggers & Cloud Cutters (Dagger Soup).

However, as mentioned, morons are fucking up prices across the board.
