Well, not super-helpful yet and a tiny bit old... but the latest Eorzea Collection video showed the following (new/previously missing) minions in 2.1:

Raubahn/Kan-E-Senna/Merlwyb (new veteran rewards)
Wolf Puppy (new)
Coeurl Kitten (new)
Bluebird (old data)
Buffalo Calf (old data)
Mini Mole (old data)
Fledgling Apkallu (old data)
Wind-up Goblin (old data)
Sylph (new)
Tonberry (new)
Fighter/White Mage (new veteran rewards)
Crowned Chocobo Chick (new)
Tender Lamb (old data)

Still no Tiny Bulb sighting.

Buffalo Calf is obtained from the new MSQ titled "You're Gonna Carry That."
Wolf Pup is obtained from a quest titled "Man's Best Fiend" in Western La Noscea (X: 26 Y: 26)
Wind-up Sylph is bought from the Sylph Vendor in East Shrouds. (X: 22 Y: 26)
Wind-up Amalj'aa is bought from the Amalj'aa Vendor in Southern Thanalan. (X: 23 Y: 14)

The vendors also sell, respectively, the new goobue and drake mount.

Slime Puddle is likely from the DQ11 event. Edvya, as far as I can tell from Google, is a princess from Ul'dah history. Link. Probably for the same seasonal event this year.

Guessing Tonberry, Bluebird, and Bulb are all from different routes on Crystal Tower. (Hey, let's all use this week's item choice on a minion!)

Edit: Probably Pharos Sirius, Haukke HM and Copperbell HM actually.

The Slime Puddle is almost certainly not the DQX event! It's not a DQ Slime, it's like the one in Copperbell. If I had to guess the Bluebird would be in Pharos.

Also Wolf Pup is from "A Man's Best Friend" in Western La Noscea (also Lv15 and 26,26)

oh man there's a prereq for the Coeurl/Wolf Pup minions and it's the same quest

it looks like you can only get one maybe!?!??!

Veteran Reward.

Coeurl Kitten + Wolf Pup interact with each other and have fighting animations if you have the summoned in battle

Slime Puddle drops from a chest in the Copperbell Mines HD. The chest is on the way to the boss and hard to miss.

We got Bluebird from a level 50 treasure hunt in Larkscall. We did the fight with a full PT. 5 or 6 imps, then 3 of the twintania adds, then 2 greater demons. Was super easy with a full group. Chest had a crap level 45 helm, and the bluebird. Now to find the SHEEP

You get the buffalo calf from the main storyline.
