Jim Harbaugh literally just did that very thing. Left Stanford and went 13-3 in his first season.
Also Saint Nick was 9-7 his first year in Miami. Dennis Green went from Stanford to the Vikes and went 11-5. I'm sure I could dig up a dozen more but those are the ones that came to mind.
