Going on a trip later this week, so I've been putting off playing the main game, only just into chapter 2 right now, but my Norende is almost completely finished... Do the beast parts do something for you later in the game, I've got a big stockpile from Norende and from grinding a bit by killing everything with mug, don't want to sell them if they are actually used for something, though.

This game has such a strange synergy with it's music. The game is evocative of the traditional pseudo-European setting with knights and dragons and such but I found it quite amusing getting into the first "job" boss battle in this world setting only to have this hard, heavy rock song play:

That's patently false. Utsusemi blocks the breaths. They'll do Eye -> Breath, but Eye goes through Utsu and Breath will eat the shadow.
If you're slower than him throw on some Hermes shit or swap to a faster job.
Rampart blocks the breaths too, and Greater Fairy Ward/Enigma overwrites resist down. Ward is nice since it persists until they uses Eye again; occassionally they can do Eye -> Breath -> Breath which can be annoying if you aren't expecting it and are relying on Utsusemi.

Spiritmasters level 14(?) Ability grants Elemental immunity to all party members for ~4 turns. Just slap that and RDMs BP+2 When hit with a debuff move on one of your people and back, have your 3 people beat he boss up and have the 4th keep your party immune to E'ERTHANG.
Or Utsusemi and afk, as Rocl said. They both work.
Edit: Yah, Turtling works really REALLY well in this game, but you take a bit hit to your Attack output by doing so. It just depends on your play style. Faceroll through immunity, or faceroll through 9999. Still had a lot of challenging boss fights, even when I was overleveled though.
