You can always get one to spawn in the first main courtyard using rancid bait meat. They almost always end up dragonforging your shit. The other dragons can be hit or miss with that.

Point of note, I am enjoying this game but not as much as I hoped. Traveling is super tedious. I also didn't have the first game thus no infinite port crystals. While I'm glad the controls are not Monster Hunter tedious, I was hoping the fights would replicate monster hunter's difficulty.

Its damn near impossible to do such a thing without thinking in terms of gameplay considering that Dragon's Dogma is an RPG with stats and level ups. As you level, monsters become easier independent of your skill/equipment simply due to the fact that your character is stronger. The level at which you reach certain bits of content may vary, then there's also the fact that DD has difficulty modes whereas MH does not (I sure hope you're playing on Hard if you're complaining about difficulty!)

Anyway, I could go on forever on this subject but the fact is the games are too different for such comparisons.

I was making a loose comparison and didn't think I was conveying incorrectly. It's an ARPG, there is some button pushing and joystick moving "skill" involved.

I've found that if your pawn isn't a mage or a sorcerer they are about fuck all useless.
