Aren't bitcoins just data hashes? What value is there in an isolated data hash?

Everything on Earth is afforded the value we ridiculous humans give it, even if it is something that is functionally worthless.
Personally, it's just another fact about humanity that helps feed my existential crisis.

But yeah, not too hard to understand why it's perceived as valuable, especially after crypto skyrocketed.

Yes they are. They have value because people are willing to spend money on them. Now if you're asking why people are willing to spend money on them, there's many reasons, some of which change depending on the coin. The easiest example is exchanging between currencies; it's easier (and tax free and with heavily reduced fees) to buy bitcoins with dollars, fly to Korea, and sell those coins for whatever it is Korea uses. Or, let's say you want to buy drugs but don't want to put them on the credit card or carry bundles of unsecured cash; cryptocurrency fixes that and allows you to transfer large sums of money without having to carry heavy bills or leave a bank trail of where the money came from.

There's plenty of other uses as well. Siacoin for example uses their coins to pay for storage on their network; you can use their cloud services for pennies on the dollar compared to competitors, at least according to their business model. Ripple is looking to be a government backed version of international money transfers like I outlined above, etc etc.
