There was a time in my life, when I was young and an ignorant redneck (mostly thanks to my father), that I enjoyed my steaks well done with some ketchup. At some point I saw the light and now enjoy my steaks in between medium and medium-rare. Fuck you guys. I want a steak now.
I was raised on Medium till I saw the light a few years ago. Medium rare only now. I prefer the taste when it's rare, but it fucks with my stomach too much.
^P.much the same for me. Or rather, I grew up with everything well done because my mom liked it that way and I never new the true taste of meat until I got married and tried medium cooked stuff my wife made. Depending on the meat I'll go medium-rare.
I was in Le Cordon Bleu for a short span years ago. Talking with one of the other guys in my class(white of course) and asked him," You pretty much just like the taste of blood?" He shrugged and said, "Yeah."
Also, the chef for the meat fab class was a big burly 6'7 ish guy with a chopped off thumb. I was cutting up a raw venison. The chef walked by and saw a nice nugget he liked. Picked it up and ate it raw.

I eat mine medium well. Myoglobin w/e. A rare steak will have left blood on the plate it was cut on.

I remember when I got shipped out to Stillwater, Ok., for a buisness trip and had my first official cowboy ribeye from a local family resturaunt/cow farm. I mistakenly asked for a bottle of A.I on my medium rare and the waitress chuckled a bit before getting me a bottle. The thing must have been like, 7 years old. It was then that I learned about the rule out there: if its worth eating, it worth eating without sauce. I skipped the A1 and it was still the best steak I'd had in years. I refuse to use steak sauce on any proper stake ever since, but my dad loves to do the Chari and cook his steaks all the way through, so I will use steak sauce on his medium well steaks.
I also go with the "no sauce unless it sucks" rule. Happily, the remaining bottles of A1 in my house have found a proper usage. I've learned they pair nicely with roast beef sandwiches, and hamburgers.
I'm so glad my mom taught me how to cook a proper steak at a young age. She hated preparing well done for my dad as we both felt it ruined it. I've always gone rare to medium rare. I only order rare now when it's something like kobe beef/grass fed beef in a high end steakhouse or the like. A1 is great with burgers, but my best burgers are made with salt, pepper, worstechire sauce, garlic powder all mixed together before forming the patties. Juiciest burgers ever.
