we do get alot of healers but each of them do actually have some sort of niche role to fill.

only 4 can break cap atm.
Aerith currently reigns supreme with her excellent MND rating and host of Soul Breaks, if you have them.. and can also Summon, meaning that she's got Kirin available to her.
The rest of them are all decent healers with Soul Breaks that are situationally useful depending on what abilities you have or dont.
Arc for Mass Shell, Lenna for Mass Regen, Selphie kinda sucks if you don't have Trabia's Light because she cant summon and her default Soul Break sucks.. but she does have Celerity if you ever need that 1 extra slot.
But yea.. 4 healers who can break cap atm is more than enough.
As for casters.. its a lot more limited than that.

Vivi is clearly the superior choice because currently Rydia is capped at 3* Black Magic (but not in the Japanese version) but is still good. Plus some fights you will need more than 1 caster (or a whole party of them).. whereas you rarely need a second healer.
If you include Summoners, then Garnet and Yuna count too.. but you'd need to have summon abilities honed up and the Summoner RMs equipped just to keep them going.
Quistis and Vanille are barely passable as casters. They can use 4* but their MAG stat kinda holds them back from being pure casters. Quistis is more of a hybrid support class than anything (she can do breakdowns).. and Vanille is probably better healing, unless you really need a caster in XIII.
