Two ability slots force us to make choices, and honestly, that's the hardest part of the game right now--picking what to take, and on whom.
Once you have that down, execution is not hard at all. You S/L once in a while if you get particularly nasty attacks, but since you can slow down the ATB so much, actually doing the battles is quite simple.
This game really does feel more like a strategy or tactical game than an RPG right now. If you enjoy that, then you're fine with two-abilities-per character. If you want more of an RPG feel, then the more (ability slots) the merrier.
