I'm trying to reason my way to why it's a justification of defense that he was being manhandled when the injuries don't match up.

And to answer your question Neph, I've never been pummeled but I have seen plenty of people getting the shit kicked out of them. They never thought they were going to die, so it leaves me wondering.

Sure he has less lethal means to take him down, but as neph already pointed out you don't go for less lethal means when you've already escalated to deadly force (you would be correct if the tussle in the car didn't happen, but it did). The cop had a gun to begin with, and he almost got shot in the car himself, according to his story; he isn't gonna suddenly go for less lethal if he (reasonably or not) thinks his life is in danger.

A better solution is to buy better locks, a smoke detector, and various other safety measures for the cost of that gun and all the bullets needed to be proficient.
