Personally, I still think this event is garbage even though the rewards look tempting, especially for a new player. As you noted, you'll have issues with the last stage, with success probably relying on a good dual-wielding Elza if you can find one. Otherwise, yeah, you'll be limited to the mid-tier, which probably isn't worth the stamina since you could instead be progressing the story or even farming into Hero Rings.
As for leveling, capped 4* should be able to get you to the end of the 2nd island, but you'll start feeling the sting around the ice mountains and such. Since cactaur event is coming up, I'd suggest spending today farming some sacred/holy crystals in vortex and then throwing the weekend exclusively at that to try and get as many people as possible to 80 5*. Depending on what you pulled, you'll want one healer (Refia > Lenna > Roselia > Fina in that order, imo), someone with full break, and then some solid DPS. Tanks aren't really needed for story content, though some optional/event fights may make them useful if you've got Cecil or WoL.
Once you either finish the current story content or feel you've reached your limit, you're either in the position to farm hero rings (you'll need more achievements, of course) or perhaps more specifically target rank EXP. I'd have to double check on the most stamina efficient stage at the moment, but I'm suspecting it's going to be some of the 6 cost stages in the new area that yield something like 230+. I know Diabolos' island gives around 500, but it's 15 stamina. Would personally prioritize ranking so you can get more sleep/whatever without having to camp the game and not waste stamina. And if we're lucky, we'll get another event like FFT that was awesome with rank gain.
Since you've missed some event weapons, you'll also want to try and tackle the optional bosses in the farplane as you're able. The katana will probably be your best weapon for a bit, which Lasswell can use if you don't have better. The armor is also solid for it resists. You probably won't beat the demon one for a while, though, even with a decent carry. So don't worry about that. In the end, it's all just lots of little grinding. Most people talking about farming TMs here either spend for additional stamina and/or run bots from an emulator. Manually doing the shit is tedious, especially without multiples of the desired unit.
