You're not alone (hah!) and I've never understood the fixation on the entry or an insistence for a remake. I'm a big medieval fantasy fan, but never really felt it returned to that "roots" it was supposed to. Forget about the shit characters and various loose ends that felt worse than the back half of Xenogears.

The XI blue mage aesthetic is unmatched and I’m utterly disappointed they haven’t given us a version of that armor in XIV especially with Thavnair basically being the XIV equivalent of India like come the fuck on its right there

Yeah, i think it was a fresh breath of air compared to VII/VIII which went super modern. 4 member parties, a delightfully funny game and a lot of epic moments. That still from bahamut vs alexander was my wallpaper for many years.
The only character I think was shit was Amarant. I don't think they had an idea on what to do with 'em. Also maybe Eiko? I don't really remember what she did besides help Garnet/Dagger. Its been 20 years, maybe she did other important stuff idk.
Eiko was fine for a late game character. Her story was thin but made sense and it made sense it was thin. B+
Amarant was an empty piece of paper that you were encouraged not to write on. D
Vivi was great. A+
I don't remember anything substantive about Quina except they seemed to decide they needed a weird race with two members for merch. C
Steiner was a blowhard but played his part well. B-
Freya's characterization was pretty minimal but they gave her a tragic past to compensate. C+
Garnet's arc was satisfying. A
Zidane was fun, but the alien world twist tainted my appreciation of his character. A-
