Okay, how the F does capturing work? I'm supposed to do some obscure thing or something? the game tells you to weaken the monster, make it trigger a trap and throw a tranq bomb a it, but... it does nothing. I can not weaken it more without killing it (was doing the quest to capture a shogun centaur), the first try I guess I tried to capture it too soon, but the second time I tried twice to capture it but the bomb did absolutely nothing, the palicos ended up killing it 10 seconds later, so it was at the brink of dying when I tried.
How does this work? Do I have to do anything special?
As an addendum to what Rata said, it will always take two tranq bombs to capture. If you use two tranqs and it still isn't captured hit it a few times and it might go under the threshold necessary and immediately get caught as long as it's still in the trap. The timing is rather strict though so you are better off just waiting for it to limp (word of warning, monsters will not limp while enraged so if you think you are close wait out the enrage timer).
Tried a third time (I trapped it three times, threw 7 tranq bombs, no dice) and failed again cause palicos killed it, so no matter how much HP it has left, if it's not limping it wont work? that's kinda annoying... If It doesn't limp and it has low HP you're basically fucked.
You should be able to capture even if it's not limping as long as it's HP is low enough, limping is just the best indication of capture-able HP. If the Palicos are killing it you can try bringing Gathering Types with Gatherer Pro which forces them to not fight. They'll still serve their purpose as meat shields but you won't run the risk of having them kill it while you try to trap it. Alternatively use an Assist type with Monsterdar which I think might make the monster blink on the map when it's ready to be captured, though I'm not 100% on that.
What's the deal with the ??? Monsters? Are they unkillable? I was doing a quest about delivering two Wyvern eggs and a huge electric wyrm/bird was sleeping, I proceeded to slash it and after 20 minutes of going at it it wasn't even limping, after a while it just started to do charges all over the place and taking 1/3 of my HP if I got hit and decided to say fuck it and abandon the quest. What gives?
Those are the Elite 4, new flag ship monsters for MHX/Gen. Basically those quests are supposed to introduce you to them (like the Glave-Anus one where you hunt mushrooms) and show off how badass they are. To this effect they have like 5x the normal HP and even if you do manage to kill them you don't get any rewards for doing so beyond the normal 3 carves (no break rewards, etc.). You are essentially supposed to see them, shit your pants, run around like an asshole trying to avoid them or just throw a dung bomb on them and watch them run away to take a shower. You'll get a real quest specifically to fight them in later ranks.
Finally done with all the village 3* quests

Yeah I am only HR3, barely. Just duoing them with a friend and taking our time (read: he plays much less than I do). I hit the credits (Village 5 Star Urgent) yesterday. Did it all with just the BuJaBuJaBu set (ATK L) and the first Narga SnS. Now to work on the 6 Star stuff, villager requests and unlocking more skills.
I just spent 43 minutes in a 3* Bulldrome hunt, and yet, I'm highly satisfied with the results :D
Cleared HR7 urgent, and now the Deviant grind begins

Hoping I can find people to do the last quest in the line to unlock it today, but fuck if I know. People seem to not understand that not-key quests are important this time around, both for unlocking other quests/deviants or hunter arts.
Krandor I'm gonna pick this up today but is there a beginners guide out there?

I'd say between looking thru the r/MonsterHunter subreddit and using Gaijin Hunter's youtube channel you should be able to find the answers to most of your questions.
Coming in cold there's alot to digest so I'm not really sure where you'd start.
