If you make a td, is the play automatically over or can you still fumble a ball after the fact if the officials haven't stopped the play? Because he definitely had control stepping into the end zone, and it wasn't until a step later that the ball was smacked out of his hand.

Doesn't matter if you have control while crossing the goal line, it matters it you make a "football move" while crossing the goal line or cross the goal line and maintain control while going to the ground. I'm not sure he did either.

No. You aren't considered in control of the ball if your feet never touch in bounds. They must have touched at some point (or one knee), but you can dive into the end zone just fine.
