Because in the end, it's not total genetic variation we care about it's the certain shared genetic variations that are supposed to define a certain race. And because race is physically determinable, it is often used as a way to instantly categorize people for both nefarious (black guy, better make sure he doesn't rob me!) and innocent (I'm inviting an Arab to my home, I should check to see if he abstains from pork) purposes.
Now you can say race is a social construct in the sense that we place arbitrary importance on those variations because for the most part they are completely unimportant... which is where the whole racism is bad thing comes from. But to deny that those variations exist is to deny science. You don't get white people with Asian epicanthic folds. You don't get black people with ginger red hair. And there are proclivities for medical conditions between certain races that certainly are super relevant for a person and their physician to be aware of.
