    You clearly didn't pay attention at all. They said for the demo, they only had one pokemon per trainer as to speed it up, and normally there would be three. The battle ends once all of one trainer's pokes are fainted.

    I think it's cool because you could use it as strategy to maybe buff the other person's pokemon to get it out of the kill zone so you can do other stuff. That and going through that many people's pokemon would absolutely take way too long lol
