nice, i smoke a lot of meats like pork shoulders and beef roasts and stuff, made carnitas style pork a few times. i love to cook/eat

used to think you needed a smoker and everything but you can easily smoke stuff on a weber charcoal grill using snake method

shit thats lame. they make a little box to put wood chips in for gas grills but idk how it works and idk how you'd keep the temp low for hours, what a pain

It's actually easy to do lower temp you can do zones p easily.

I got my dad one of those little boxes one year for Father's Day. He said it worked pretty well. He has a large smoker that he uses for ribs, pork, etc. I got him the small one for when he wanted something for just two people. To keep the temp low you'd just set the burners to low, or put it off indirectly. It's not as good as a traditional smoker.

The guy we bought our house from last fall left a smoker. I was excited at first, but it's an electric smoker. Not sure how I feel about that.

I feel like I can just grill normally and do my roasts and shit in the instant pot

You definitely can. I do pork butts in the crock pot with some cider as the liquid and I do ribs low and slow in the oven then finish on the grill. You just won't have that smoke flavor unless you add liquid smoke or something.

when i do like smoked chuck roasts I smoke them for a hour and ahalf or so then bring them in to the crock pot, similar thing with pork shoulders once it hits 150 i like to get it off the smoker and bring it in to the oven wrapped up. I would prob do something similar if I only had a gas grill.
