Could someone explain to me why those guys would cooperate with Maeve after she put down the knife? I really don't get why they're risking their jobs and their lives for a doll with nothing to offer.

I'm bad at names. I think the Asian guy just wants to help and she knows about the other guys indiscretions. Plus isn't her persuasion cranked up too. It could be speaking to that.

there are cameras everywhere, except when the plot needs them to disappear. pretty frustrating but still entertaining enough
also guessing arnold somehow uploaded some form of his consciousness into a host before he died and that's who is fucking with the other hosts now
Yeah the walking around is a pretty large plothole. I'm convinced that there is little-to-no oversight in the butcher shop as there's no real way that these dudes could be fucking dead dolls on the dl without being fired. Ellie had to specifically go looking for vid of one of the guys doing it last time. But walking around on higher floors? Nah.
As far as not destroying Maeve when she put the knife down, the episode alluded (twice) to her being able to wake herself up on her own. If you give the writers the benefit of the doubt and extend that line of thought a bit, two little carve-monkeys with only basically knowledge of the interface system may not reliably be able to subdue her at this point - or at least the fear of that would provide sufficient deterrent to screwing her over.

I mean, not to be pedantic, but nothing that complex and restricted has a "delete" button that any fucking monkey could accidentally press. That'd be like a Fortune 500 company having every random accountant able to delete the entire network by double clicking an icon on the desktop.
Also, a hard coded STOP command would be pretty effective.

I agree that letting Maeve walk all around the higher floors was stupid and a pretty big plot oversight. I kept expecting them to get busted. But I just chocked it up to him making it seem like he was controlling her and she was acting like a puppet (more-or-less during it - until the end part) as he had the controller out and making it seem like he was moving her. So I just went with the fact that sometimes they move models around the facility for various reasons.
