If you equip a 2nd job to someone, is it then lost forever?

If I equip H'aanit with Warrior, can I not then go and place it on Therion?
Along with that, say I place Dancer on Ophelia to learn the SP Charge skill. I can then place the Scholar job on her and keep the support abilities (SP Charge) but lose the dances, correct?

Ahh okay, so its like a key item that only one person can use at a time but isn't lost when used. Got it.

It’s not a key item to remove a job just go in the job menu then chose none

It's more like: you only have one subjob stone, per job, among the whole party. Can even change them whenever you want in the field. I've been passing /Merchant between Cyrus and Ophilia to Rest in encounters and be a general cheapo on SP restoration.

I hope no one else is retarded like me and didn't know the nuts were perm stat boosts this whole time. I haven't used any items since the very beginning of the game so I had no clue these existed as I don't bother to check my item tab anymore outside of maybe the rare occasional grape/plum usage.

I think it has to do with steps walked + danger level of the zone.

seems that the final final boss shifts your party members.

Like you start the fight with 4 and at some point he kicks those 4 and force you to use the other 4

So gotta gear all 8 and level them if true

Based mostly on level of the zone. When I was making blind suicide runs through level 30+ zones as a level 10 or so I'd get like "you found 3k+" quite a bit. Her talent adds up quite a bit throughout the game and Merchant is pretty damn useful besides. I definitely don't regret starting with her.
