Check this out, people from other states and counties move to Texas and bring their culture and cuisine. When I was in college, I was a manager of a New York style deli. We boiled the bagel dough before baking them like you are supposed to do. Because of this I'm kind of a bagel and meat snob. I'll visit other bagel places and give them a yea or nah. I still get requests from friends and family for certain sandwiches I used to make.

We "cover up" a ton of foods that wouldn't be as good. Shit every have a salad that's just a couple of greens and nothing else? Crackers without cheese? Coke without rum/brandy? It's terrible food is about mixing shit up and flavors coming together not eating everything separate. So damn right I'm putting something on my bagel.
