Check this out, people from other states and counties move to Texas and bring their culture and cuisine. When I was in college, I was a manager of a New York style deli. We boiled the bagel dough before baking them like you are supposed to do. Because of this I'm kind of a bagel and meat snob. I'll visit other bagel places and give them a yea or nah.
