Give it another year then play it all from the start and don't worry about it.
Chances are they'll have the Royal Edition+(insert shameless promotion here) by then.

If you want to play the game bad enough (as the new DLC won't be coming out until 2019 it looks like), just add in the DLC and play it when it seems like the most obvious point to do so. Except for Episode Ignis, wait to finish the game first as that one spoils the ending a bit. But Eps. Gladio and Prompto are pretty obvious as to when you should play them.
You're only doing yourself a disservice by not including all the extra story they added from the DLC.
The game is fine to play as is right now. Anything plus they’re adding is icing on the cake.
Trying to pick it up again, do hunts have any practical consequence for the MSQ/Ending or any significant story moments or is it just "for fun"?

I started playing Comrades even though I don't have a PS Plus subscription and you can surprisingly still play quite a lot with AI bots. I did run into a few missions that AI is useless for though. Neat that you could still give it a try though.
Trying to do the quest Let Sleeping Mountains Lie, but Dave isn't where the quest marker says he should be. I don't have any dog tag quests active. Where might he be?
Be prepared for a very long battle.
Try to get the cool parry animation and Titan summon.
I figured it out. 'Ol disappearing Dave is apparently a known bug but reloading or traveling using Umbra seems to put him back home. You have to talk to Dave first before you can accept the hunt.
Beat Adamantoise. It wasn't difficult, at all, just annoyingly time consuming. Between Armiger spam and Gladio using Impulse I downed him in somewhere like 20-30 minutes. Maybe I'm spoiled though, being used to stupid long fights in FFXI.
So what else is there to do end game wise? I already killed all the optional bosses for the weapon forging quest in Lestallum. I'm rank 7 hunter with 15/40 to get to rank 8 but I think I've killed everything offered to me in Lucis and Altissia.
