Even their "bad" Spider-Man movies made over $700M. Venom made over $800M. Into the Spider-Verse won an Oscar. They would have to change some things, sure, but they can keep making Spider-Man movies without really needing a connection the the MCU. The MCU, on the other hand, loses out if it doesn't have Spider-Man.
Sony has nothing to gain and hundreds of millions to lose by giving Disney what they wanted. I get it, I'd be upset if it was 100% certain we'd have no more Spider-Man in the MCU, but Sony would be making a hilariously bad business decision to let Disney split things 50/50. Sony holds all the cards and Disney is jockeying for fan outrage to get some leverage.
