Which is fine, except Strange told Wong to get everyone. Even if they had been snapped, why would they not show up for the final battle?
Strange and Wong got people that were active. I'm assuming the Eternals have been just pretending to be normal humans for a few centuries, so Wong and Strange may not have known about them. Strange didn't even know who Thanos was
I was always under the impression that thanks was a deviant, isn’t he in the comics? Maybe in this movie they will say he is.

There is a deleted scene from Endgame where Hulk and The Ancient One are talking and Ancient One mentions “they” have been watching Thanos for a while and Hulk asks if that’s the case why haven’t “they” interfered and Ancient One basically says if we interfered with every potentially dangerous situation we would have had to kill you a long time ago.
Thanos wasn't actually going to destroy the planet or any planets just wipe out half the population and if you're immortal and lived among humans for thousands of years then it wouldn't be that big of a deal to see half the planet disappear. That'll probably be the leader's reasoning they weren't around during Infinity War.

Thanos was also an Eternal, the Titans were a different branch of the same family.
