Fully overturning Roe would probably be more politically useful to Democrats than nominally keeping it but making it functionally invalid.

Dems aren't going to have 50 votes in the Senate to overturn the filibuster to establish nationwide abortion rights, so Roe getting struck down will just make them look impotent.

GoP rides heavy on 2 things:

Illegal immigrants
Abortion

If you get rid of abortion and strike down Roe 100% then it's gonna be a negative to them. The politicians don't actually want it struck down because it's a huge talking point. If they somehow won on both of their 2 main points they'd have nothing else to really stand on for anyone who isn't just pure "OWN THE LIBS WHILE WE BURN TO DEATH" cult fanatic
