It all depends on the blend and roast. If it's better, then you're drinking a dark roast with low caffeine. That or it was burnt during extraction. If it's sour, the beans aren't roasted right.

i got some chorizo the other day, the like soft kind, it was really weird, i put it with some cabbage like a crack slaw type thing, I was terrified I hadn't cooked it all the way. I did like the taste. I didn't realize there were 2 types. I need chorizo edumaction.
