The reason people stop sticking to diets and lifestyle changes it because people can't cook and are bland as fuck in the kitchen. There are plenty of ways to diversify chicken, beef, fish, vegetables and high density carbs.
Also people drop diets is because it requires effort and they don't see instant results or continually lose 5+ lbs a week on their fad diets.
Also if you're over 12 years and a picky eater you're an awful person.

I'm 5'11 and 160s is way too low for me. I don't want to drop below like 175 max. I'll be lifting again soon hopefully so a lot of it will be eventually (long term) go back to muscle but yeah that's just skinnier than I want to be. I want to be eating fried chicken twice a day with a few beers if I so choose.

at the risk of sounding super feminine i just want my belly to go back to flatish and wanted to lose some of the weight in my face which has mostly happened already. i could prob stay in the 170s and look decent if I worked out yeah, but I don't do much besides walking and tbh i dont see that changing, maybe if i bought some at home stuff but i dont really have room right now
This is understandable and I feel mostly the same but I'm setting more reasonable goals because I'm 33 and I like enjoying the things that I enjoy and it's not worth it to me to really sacrifice that much to look like I did when I was 24.
Face bloating could also be caused by water retention from a high sodium diet. Not saying it is, but it's a possibility. You may be taking in a fuckton of salt depending on what you're eating with your keto. That and poor sleep and shit. If you wake up and ice your face a bit and it seems to get thinner then yeah you're puffing up probably from shit sleep. Personally, when I go to Texas or some shit and I spend the entire week eating nothing but bbq and fried chicken my face bloats up like a motherfucker from the salt.

Drink beer and fried chicken... in moderation. Which is where that falls apart quickly because a weekend of binge eating will undo any progress from the days prior. Work out, eat how you want just don't expect significant results.
