I don't make less than two full racks of ribs at this point. It also helps that they're frequently Buy One Get Two at my local grocery store.

Sugar in some form is normally a main ingredient in either the sauce or the rub. I balance it out with paprika normally.
Two parts brown sugar
1 part paprika
some of the following:
garlic powder
onion powder
chili powder
kosher salt
fresh ground pepper
dash of cayenne pepper, just enough for some heat, but not enough to actually burn. Just a tingle.
Rub on the night before.

The one thing that bothered me is that the big dude didn't eat the ones guys ribs cause he said it was pink.
First, pork can be pink, as long as it's not raw. It's not chicken. Can eat med. rare pork like you would a steak. Maybe that makes you uncomfortable, and that's fine, but it can be consumed safely.
Second, smoke causes the meat to look pink. They could be cooked the whole way through and still be pink if they were smoked.
