I'd only grab 3 because it's the only one we haven't had released in a "Close to NES" form in English. I'm not a big fan of the visuals, so touching any of the ones I'm vastly more fluent with (4-6) would tick me off with the changes.

How do you guys feel with the absents the re-release add content? Does that make stuff more or less definitive ? I think I'm going to miss the added jobs in V. Not sure sure what DS III added.
DS III was kind of its own thing. From what I recall the only "new" content was Onion Knight was a hidden job.
I mean sure, most of the added stuff was cool, but it was pretty much side or post game content after so long after the original releases. It's not like without it the games are an incomplete experience. Of course I can understand why people are not happy that it's not included.
Well the mobile versions at least right now are not supporting controllers.

I was about to say. I mean yeah the NES version isn't completely terrible but between some of the bosses/dungeons forcing you to use only one job if you want to win (Black Mages for the Rat, Dragoon for Garuda, Mystic Knights for that cave where enemies multiply) and the Crystal Tower really make the game feel brutal
Afair he dislikes 3 in general, so there's that to consider. Plus, there's a ton of people that don't like the DS version at all and prefer the original
So is the FF3 3D remake on mobile the bad one? I was gonna start that up soon lol.

That's the version I played and I never beat it, I think around the water level or something I just got bored and stopped playing.

3 was by far my least favorite FF. the story is dull, the dungeons are meh, and while it was awesome for introducing the job system, it was crazy unbalanced and I remember 90% of the jobs being worthless. I just have no desire to even bother with the new version because my first playthrough was so meh
III's only saving grace was the birth of the job system, but V improved on it substantially (despite having just as weak of a story and bland-ass characters). Its funny how every time they used unfixed jobs for main characters, the plot suffered, despite the jobs never really being "that" important to the characters except for some specific instances (FFIV was pretty big on specific jobs tying into the character, as well as some people in VI).
2 is worse thrb 3 mostly because of the leveling system
I honestly didn't hate the leveling in 2. Just reminded me of skill ups in XI lol. I mean. It wasn't good by any means. But it wasn't bad enough to bother me
