Now, it might just be me, but I would think that if a game has to start late because one team is scrambling to fill its bench after 7 players and the head coach got sent to COVID protocol that afternoon, that maybe the game shouldn't be played that day for health and safety reasons.

Luckily our minor league affiliate also plays on San Jose. But yeah 7 players and a coach out and still win in OT.
