When you hear "<insert team here>'s record against >.500 teams", it's based on the record of those teams when they played them and not just when they make the statement (then, otherwise, week by week, you could just keep saying they've beaten a different number (either higher or lower) of >.500 teams because all of their previous opponents' records are adjusting better or worse each week).
