The human element is part of the pitching game, be it a catcher using pitch framing or exploiting an ump having a wonky strike zone.
While having an ump making a shitty call that drastically affects a game can suck, you can't just remove it wholesale.

I view it as the same reason they still have linespeople in Tennis. I actually think the way they're doing ABS right now is pretty good. We're not going to review on every pitch, good umps (and there are some good ones) don't really get challenged, the crowd gets into it when there's a challenge, and there will surely be some strategy developed around when to burn challenges as the season progresses. This way they also haven't completely eliminated pitch framing as a Catcher skill either.
Tennis majors are full auto calls now. There are no line judges. Only ball boys/girls.
I forget which side didn't want full ABS. Some say it was the umps. Others say pitchers. It's working well enough so far. I think in the Minors they didn't want full ABS either.

It's not fast enough. Think of a pitch with a full count and the runner on first stealing second. Is it a walk? Is the throw to second meaningful? What if it goes to the outfield and he advances to third? You can't leave active plays in that level of uncertainty.

The KBO is full ABS since 2024. Umps there don't call any taken pitches anymore. Don't think it affects the pace of games.
I remember when they polled players a couple years ago and only like 10% of the MLB wanted a full ABS in place.
The challenge based system has been great so far, especially for the extreme entertainment value of putting an ump on tilt which we just wouldn't get with full ABS
