Dumb sound bar question

If I use the HDMI input on my sound bar, with the bar plugged into the e-arc HDMI on the TV, that will let me then also use it for another device like a Roku and not mess up the audio going through e-arc on the other devices, correct?

Yes, e arc by design sends all audio that was supposed to come through the TV out to that port.
