Some servers tank Fafnir / Nidhogg with NIN/WAR and/or PLD/NIN all the time. Seraph uses PLD/WAR all the time (exception of TH who uses a PLD/WAR + WAR/PLD tank team). Gods can be tanked by either NINs or PLDs, BtL has done both (depends on god I think), some linkshells use exclusively NIN, others exclusively PLD. Some people kite with WAR, others with NIN, others with PLD.
The concept of a "Stun Orde" varies by linkshells. Some linkshell consider Stun order to be: Every person stuns based on Stun Recast Time / # Stunners. Others consider it to be a name order (BLM #1 > BLM #2 > BLM #3 > BLM#1 > etc.) who take turns at stunning specific moves or at a specific time, rather than every time Stun is Available.
Some linkshells have a lot of high level SMN for damage. Others use strictly RNG damage. Others use strictly BLM Damage. Most use some combination of the three. Some do SATA WS onto the Tanks. Others do SA onto the mob to maximize damage, but logoff more frequently.
Vrtra has been reported to be killed by straight tanking (aka Fafnir-Style with everyone at claws), others report it being killed by kiting. Tiamat is tanked a huge variety of ways, some involving PLD/WAR, PLD/NIN, NIN/WAR, Varying SMN and Aerial Armor Strategies, and much more. I've noticed screenshots where Tiamat is tanked up on top of the hill, others tank him at the base of the hill facing the rock, others tank with it facing towards Xolotl's spawn. There is a huge variance in how these new CoP Wyrms are being defeated.
I just think it's really interesting how there's a large number of different strategies you can use in this game, each one with advantages and disadvantages. In the end, some of these strategies kill the mob quickly, others not so quickly. Some require more concentration and effort, others require a bit of luck but are less stressful.
