Sure if you're tanking by yourself... But if you dont have enough enmity then all the def and vit in the world wont matter if the mobs smackin on your mages.
Basically what I do to determine whether I should add enmity or vit/def to a gear spot is total my def, enmity, and vitality. For example (completely making up these numbers) 400 defense, +30 enmity, 1500 HP, 100 vitality, and 285 shield skill. So then I look at a piece like Aegishjalmr which gives +7 enmity, +25 HP, and 23 defense. I look at my ratios now: thats 19% (7/37) of my total enmity, 1.6% of total HP (25/1525), and 5.4% (23/423) of total defense.
I then look at a piece like Kaiser Schaller which is 11 VIT, 41 Defense, 32 HP and 6 Shield skill. The ratios: 9.9% (11/111) of my VIT, 9.3% (43/443) of my defense, 2.1% of my HP (32/1532) and 2.1% of my shield skill (6/291).
After an analysis of these pieces it is easily seen that the greatest advantage here would be gained from wearing the Aegishjalmr. The advantages from Kaiser Schaller are nominal (VIT/Def) because my base values are already so high. The defense calculations are already going to be even lower because I havent calculated Defender/Sentinal/Rampart into this. Enmity being the hardest values to up, Aegishjalmr shines here when you can throw 7 on one slot. You're basically giving up 11VIT, 18Def, 7HP, and 6 Shield skill for 7 enmity, which I think any PLD would tell you is a good trade off in end game tanking.
