True that, but it's possible sometime in the far future the cost to remake ff to what you see in the demo won't be that much more expensive. They were actually screenshots of a demo that only ran on SGI machines, which I believe was to test the capabilities of what they'd be able to do on the N64. The demo was made using characters from FF6, but I think this was just out of convenience for the artists, not out of any intention to actually remake the entire game.

The video is pretty boring, but you have to remember it's not really meant to entertain you, it's a tech demo, they're testing out what they can do with a new, unfamiliar platform. Also remember that this was 10 years ago, and "sophisticated 3D games" were things like Star Fox, with ships made out of about 10 polygons.
You can see the characters' visual style looks fairly similar to what FF7 ended up looking like on the PSX. I'm sure the situation for this FF7 PS3 tech demo is pretty much identical, just using old characters to test system capabilities, nothing more.
And upon a little further searching I find that, as usual, Wikipedia already has all the information I could have needed.
