You should be able to get Average by around day 25. I've been doing somewhat the same plan you've been doing. (or so I assume, I've been doing full-on strength and endurance training) My adolescent Chocobo has hit average and I still have several more days before adulthood. Strength and Endurance: a chocobo runs at +22.5% higher running speed than a person and is ridable for 13:30 minutes. For every level (including poor!) in STR your riding speed goes up by +5% (scaled, so a poor chocobo has +22.5% to +27.5% running speed) and for every level (also poor!) your riding duration will go up by +3 minutes (scaled again).

Probably placebo but it seems like chocobos with big legs/claws run a bit faster. Maybe one of those with first-class will be same speed as a rental. We should find out soon.

Yea, why I said I was wondering. >.< Saw the data as a bit old, so it was probably thrown out a while ago anyways. At anyrate, I'm sure by the update, they'll fix those minor speed problems for the Chocobos.
It might be possible that stats may improve with age in addition to rankings, but *shrug*.
A poor STR choco is roughly 150% of normal walking speed.
A Rental has been documented to be 200% walking speed.
As much as I'd like to believe that it's possible to break rental (or that people don't know how to make sure they hit full stride before auto-run), given enough room and a straight path, it isn't difficult to test this sort of thing.
Oh also, when my choco first changed personalities, it never changed from ill-tempered, which was said to be connected to STR.
Now, when I first started raising this choco, I fed it sandy carrots, which it always gobbled up, which I think means a high affection food. I have sinve been feeding it vomps.
So this leads me to believe that sandy carrots raise STR, but not END, and gives an affection boost.
My old choco used to gobble up sharug greens and you could see affection raise after each feed. this chocobo didn't like sharug but preffered azouph and that raised his affection. then it stopped caring for azouph and now gobbled Vomp carrots up which increased his affection. now it in fact dislikes Vomp Carrots and munches them dicontentidely (my choco got the "is spoiled rotten" message 3 times now and have had to discipline it 3 times).
In my experience choco's taste can change and any food they like at the time will raise affection.

I want to level Strength and Endurance evenly, so I'm not gunna switch over to deliver messages just to max out STR faster.
My estimate seems about right, then.
I just hit Day 43 on my 2nd gen choco and got the following message from Zopago "You've done a great job with this chocobo, now is the best time to raise it's attritbutes" (paraphrased)
At the beginning of the day it's stats were:
STR - Poor
END - Poor
RECP - Outstanding
DISC - Impressive
I'd been spamming the story of a worrisome chocobo an average of 2x per day since I got access to it.
On Day 43, I learned Bore on the first try and got approximately half my energy bar back.
Then, I told it the story of a youthful chocobo and learned Burrow on the first try! (and got half my energy bar back)
I took a long walk after this to raise my affection because I'd been killing it a bit with care plans.
Then, just to see what would happen, I told my choco the story of an impatient chocobo and got the message that it was "inspired" and again I got about half my energy bar back.
I kept alternating this pattern, and had my choco "learn" all 5 stories in one day. Of especial note is that I didn't even have Brutus' final story at the beginning of the day and learned it during one of the alternating long walks.
Also, sometime in the story learning process, DISC raised to Outstanding as well.
So, it seems day 43 is a key day for choco action.

IIRC, the lowest reported level for learning Burrow was at Average or Better Than Average stats. I've had Average stats since day 26, and Better than Average since day 31 and have been spamming the Burrow story diligently since before both these days with no results. Then on Day 43, with the same stats as I had since Day 40, I had 100% success rate on story learning.
So, my point isn't "Yay me! OMGZ~!~!~ my choco is awesome!" but that on Day 43, instead of having a slight chance to learn the story, it seems that the chance is very close to 100%, given that your choco has the correct minimum stats. This is potentially good information for those that want to test out raising a chick to learn Gallop and Canter, then kill its RECP/DISC in favor of STR/END as quickly as possible to gear up for choco racing.
