I don't think they can be born with abilities.

My chocobo has had 1%HP for about a day now, so I can't really do anything with him for the time being.

We did go on two walks, and he met "Blood" on his first trip outside of Bastok.

I fed my chocobo one gyshal green last night. After that the VCS NPC said my chocobo was "completely full" or something like that. When I go back to check on it tonight it should be on Rest for a day to regain HP.

Then I have it taking walks in town for the next 4 days, lol.

From what SE's update says, most of the "Care for your chocobo" options don't increase (or decrease) any stats other than affection. I'm guessing the friend-making process for chocobos unlocks the "Compete against others" option when they start to mature.
