NA release was fun because we had no idea what the fuck we were doing. Falling down holes in Ordelle's on top of tentacle monsters, riding the selbina boat and seeing dhalmels for the first time, wiping to the 2-3 fight, etc. That's what made the first weeks the best, not the awesomeness of not having a subjob or any gear.

The only thing that maybe might entice me to start over on a new server is if they released a modern client that only worked with the new server. The current client didn't even match existing mmorpg PC client standards when it was released, much less today.
IMHO, the only folks that want a new server are the ones that couldn't get along with people on their current server. This is why split servers are pits of hell. All the antisocial types pull up stakes and march over the hill expecting to suddenly get along with a bunch of other people who couldn't get along with anyone either.
One of the best parts of FFXI is that you are always known. Unlike other games, you aren't forced to change to an entirely different character to play a different class. If you change jobs to experience game in a different way, you're still on the same character and everyone still knows you. There's no hiding. This is great for all the friendly people out there and bad for any unfriendly types. Sounds like a Win/Win to me.

The point of any ( or most ) MMO's is to upgrade your character over time. You work and work and work and over the course of your playtime you feel like you have accomplished something. Yes, its important to socialize too. But without the feeling of working towards something, you would ultimately have no motivation to actually play the game.. at least I feel that way.
A server that resets every 6 months loses that feeling. A private server does not.

The idea has developed substantially since its inception. If you actually are interested to see why the fuck I came up with it, I'll post the whole thing. So is there actual interest or not?
