Almost wanna say we saw that with FGT, but it obviously had its price. Unfortunately, we're still in the dark on just how much Ichigo has regained of his former self and if he might somehow be able to tap into that again without consequence.

Don't most Captains have stages of Bankai? I know Byakuya has the Stage 1 Blades, then the Stage 2 Arena, then Stage 3 the Wings and Attack.

No, those were just techniques he uses.
Byakuya's Bankai is millions of those little blades. He most commonly uses them just as a bigger wave of blades than his shikai. The arena thing, he just compresses all of his tiny blades into swords that circle around the opponent. The white wings, I guess he just compresses all his blades into that thingy.
Theoretically, I don't see why he couldn't compress all his tiny blades into a figure of a person (make it look just like himself) and then when an enemy attacks it, it would just eat the attack and then heavily damage the enemy.

Or just disperse the blades so thinly so that the opponent doesn't know they're breathing them in, and then command them to shred the target from the inside.
