I don't recall if it was so clearly stated, but it's definetly been implied more then once that Unohana is boss tier. There seems to be a running joke throughout SS that you really don't want to ever upset her.
I think it's more of that she has the whole "scary mom" thing going on. Which I guess does go hand in hand with her being a total boss.
Well, that and the whole, "Don't fuck with your doctor..." thing which she basically implied during the rescue Rukia arc.
Well, she's also the captain (other than big-boss ofcourse) to have held the position the longest. She's been there even longer than ukitake and that other guy. So that should hint at how strong she is.
Looking at her power level from the databook, she's stronger than any other captain other than Yamamoto.

I would be nice if they went the opposite direction of what she usually does (heal) and just made her turn into a total badass uncontrollable avatar of death.
It's a possibility. I mean Soi Fon's Bankai is the complete antithesis of her whole character.
I'd just assume she can make the manta's spit acidic instead of curative.
Maybe Kubo is trolling us again and Minazuki really is her Bankai this whole time.
Not that Kubo would remember, but Byakuya said Bankais were bigger than Shikais (or something along those lines -- he was shocked at how Ichigo's shrunk, so it's safe to say that's a first), so her Bankai has to be pretty huge.
This actually makes sense. Might be why her vice captain always carries the sword around because she herself despise it due to the death it can bring. You know, she distances herself from the sword because it defies everything she believes in, as she doesn't like to hurt others - even going as far as healing her "enemies", like Renji after being defeated by his captain, Gantenbainne Mosqueda in Hueco Mundo, and the Vizards (even though they were technically allies at the time - albeit banned from Soul Society).
Kind of like that other kid in the healer squad which "charges" each time you heal someone, and then transforms in to a single super strong death attack based on how much you healed.
