All of the 3-D Zeldas have had these "easy" bosses. It's pretty much inevitable; the boss is going to be some fucking massive, really cool-looking beast with a weakness and a slight puzzle to figure out the way to damage it. There is no avoiding the fact that once you ascertain this, the boss fight is going to be "easy." It's just not possible like in the older 2-D ones to just have a zerg of fireballs going everywhere and the fighting being -harder- but still requiring less thought (think Wizzrobes from the NES original or those 3-5 headed dragon boss things or Thunderbird from Adventure of Link to name a few) or add in characteristics of sorta turn-based fighting or true RPGs. I'll take the enjoyment of the bosses in the Zelda games now over both of the other options, with maybe the only change of bosses doing far more damage to Link, giving you consequently less time to figure out the fight and more restrict margin of error once you do figure it out.
I think you can more easily complain TP and Windwaker are too easy because even 10 hearts, much less 20, at 99.9% of the time a quarter of a heart on a hit, it's too hard to die, or even come close it, frankly. Overall, more damage needs to be done and/or hearts less abundant to find. (not heart containers) Just don't make it annoying like Adventure of Link. Even all things considered about recent ones being too easy, a Zelda game will always be fun and enjoyable, and definately a strong candidate in a topic such as this. I'd rather crush an absurdly huge spider with 40-foot massive statues than any RPG boss you can almost always overprepare for..
