As for everyone saying the series peaked at the Pain fight; let me remind you all of a little something I like to call "Obito vs Kakashi".

The anime has had a lot of pretty good fights. In no particular order, some of my favourites are:

Lee vs Gaara
Naruto/Sakura vs Kakashi
Sakura vs Sasori
Kakashi/Shikamaru vs Kakuzu/Hidan
Sasuke vs Deidara
The Taka vs Bee
Minato vs Masked Man
Jiraiya vs Pain
KAKASHI VS OBITO COME ON GUYS

And pretty much the whole Chikara filler.

Naruto vs. Neji and Shikamaru vs. Temari had real, actual tactics instead of just power-ups.

Shikamaru against anyone is just all tactics. His fight against uh... the flute chick, was also great. I was mostly talking about quality of animation though. The end of the filler arc with that Crystal kekei genkai user was also pretty good.

Choji vs that one rock dude in the Sauske chase fight. Skinny butterfly Choji was best choji.

Yep. The whole Sound Four part was good. Every single one of those fights was intense.

So all in all, there are probably a metric shit-ton of fights that were awesome. Sauske vs Naruto after he caught up in that same Arc iirc. That was a pretty epic fight. I stopped watching at some point but I do remember a ton of fights pre-shippuden being prett awesome. I didn't watch much into it due to fillers being fillers.

Did Lee or Shino have any big fights post time skip? Lee especially, I remember him jumping n and kicking bitches in the face, but nothing longer than a page or two.

No, although I think Lee got one in one of the filler arcs (and he gets some time in the Chikara filler arc). Shino has a smaller battle in the Crystal user/Three Tails filler arc I think.
