You do know that talking about the Roman Catholic Church as orthodox is not really true either, right? The entire compilation of the Bible was a giant political struggle for personal gain initiated by a Pagan emperor. There's nothing magical or mystical about it; nor is there anything special about the texts used; they're just whatever faction who wons' additions.
So really, we could have had several other gospels installed; if people hated the Epistles (which aren't very consistent anyway), they might not be included; there's a million avenues that the formulation of the book could have taken.
I don't really have a point, but read some history about the formation of the supposedly god-written text; if that doesn't make you realize you've been lied to, I don't know what will.

What if Jesus wasn't like he is in the Bible? how would we know? We have no records of him other than the "meek and mild" lamb who cursed people. Understanding the formation of the Bible, as well as when the parts of the Bible date from is vital in understanding that it really is only a book of concepts, and not really facts to be taken seriously.

Veracity is important when talking to people about whether the Bible is meant to be taken literally or not, which is the core of most of the questions surrounding fundamentalism. Do you think people would take the Bible completely literally if they knew the letters of Paul where the earliest dated parts of the Bible? It puts the book in perspective, and you are better able to understand inconsistencies in the messages, as well as understand which parts are additions by men later in life who may or may not have had their peoples' best interests at heart.
